Dairy-Free's The Way to Be

Maple Cherry Brownies

1-1/3 cups flour
1/3 cup cocoa
½ tsp salt, optional
1-1/2 teaspoon baking powder
¾ cup maple syrup
¼ cup apple juice
1/3 cup corn oil
1 teaspoon amaretto flavoring or 2 teaspoons vanilla extract (your choice)
½ cup dried cherries (or cranberries or any other dried fruit of your choice)

Preheat oven to 350F. Lightly oil an 8 x8 pan. Sift together dry ingredients. Add maple syrup, apple juice, corn oil, amaretto, and dried cherries. Mix together. Bake for 25-30 minutes. Oven time will vary. Maple Cherry Brownies are just one of the many dairy-free baked goods you can make this Christmas season. Almost anyone will enjoy these brownies, not just individuals who can’t eat dairy.

Butter Without Butter

For the above recipe, the corn oil provides a buttery element to your brownies. Corn oil is an excellent substitute for butter in baked goods. You are free to substitute any dried fruit you wish including raisins. You can even include a mixture of dried fruits too. If you want to omit the dried fruit, the recipe will still work just as well. If you can’t find amaretto flavoring at your grocery store, simply use vanilla extract as indicated.
